Protein-Packed Sugar Cookie Recipe (for approx. 40 cookies)

Ingredients

  • 1 Cup Oat Flour
  • 1 Cup Vanilla Whey Protein Powder
  • 1/4 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 3/4 Cup Cashew Butter
  • 3/4 Cup Erythritol or Lakanto
  • 4 Tsp Pyure Stevia
  • 1 Whole Egg + 1 Egg White
  • 1/4 Tsp Vanilla Extract

Instructions

  1. Prepare Dry Ingredients:
    • In a large mixing bowl, combine oat flour, vanilla whey protein powder, baking powder, and baking soda.
  2. Prepare Wet Ingredients:
    • In another bowl, whip the cashew butter until it has a smooth, whipped texture.
    • Beat in the erythritol, stevia, egg, egg white, and vanilla extract until well combined.
  3. Combine Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing bit by bit until a crumbly dough forms.
  4. Form Dough Balls:
    • Divide the dough into two balls. Roll out the first ball until it’s about 1/4 inch thick. Use wax paper or a floured surface to prevent sticking.
  5. Cut Out Shapes:
    • Use cookie cutters to cut out shapes and place them on a cookie sheet. Re-roll and cut out the dough until it’s all used up.
  6. Add Decorations (Optional):
    • If you prefer not to frost the cookies, consider adding sprinkles before baking. India Tree Nature’s Colors are a great option.
  7. Bake:
    • Bake at 350°F for 5-7 minutes. Repeat the process with the second dough ball.
  8. Cool and Decorate:
    • Let the cookies cool completely before frosting and decorating.
